Bye Daddy, Love you!

Awwww, totally heart melt. This morning Ryan was getting ready to leave for working and Raegan woke up but was just in her bed playing. So he went in to say bye to her. She was so excited to see him. He brought her into bed with me and as he kissed her bye she said "bye daddy, love you!"

Speechless.

She repeats just about everything we say. But "love you" she just would not even attempt to repeat. And this morning out of the blue she said it. It was the best way to start off a rainy Tuesday morning.

5lbs 10oz! Tiny! But absolutely PERFECT!


My sister was in labor for 24 hours. She starting having contractions at 5am on 3/3 was at the hospital at 10am and didn't have her until 5 the next morning. Whew! Glad it was her and not me!

Madalynn's name is very special! My middle name is Lynn, Raegan's middle name is Lynn, we have a cousin Nadia who is 5 and her middle name is Lynn and now Madi gets the name Lynn too! Elizabeth is Jon's sisters name, but she goes by Eli.

Happy National Pancake Day!

Today, March 1, is Raegan's favorite National Holiday! This girl loves her "cakes" This morning I made her 4 huge blueberry pancakes and she ate every single bite. She probably wont eat for the rest of the day now. I tried to be mom of the year and make them into fun shapes for her. After she ate the shapes she asked for more. And then she ate all the edges I trimmed away. Happy girl! Happy mommy!






Where'd it go?

Last week we got about 5" of snow. Raegan and I went out to shovel the drive way. She loves to help and "push, push, push" But she easily gets distracted by the airplanes flying over. We live right by the Noblesville airport so we always have airplanes flying over. She loves it.

New Recipes!

I found the blog "Cooking for Busy Moms" and I have found some yummy success! Here are some of the favorites!

Ryan's new favorite is a Parmesan Baked Chicken stuffed with Asparagus. I don't have that recipe in front of me right now but I need to add it.


Slowcooker Monterey Chicken

Ingredients:
*3-4 chicken breasts
*1 clove garlic, minced
*2 tsp. chili powder
*1 tsp. oregano
*1 tsp. cumin
*1 tsp. salt
*1 14 oz. can diced tomatoes, including juices
*juice from one lime
*1 Tbsp. flour
*1/2 c. chicken broth
*2 c. shredded Monterey Jack cheese

Directions:
1.) Mix chicken broth and flour in a small bowl to make a thickener. Set aside.
2.) Add to the crock pot the rest of the ingredients except the chicken and cheese.
3.) Pour the chicken broth mixture in, and then add the chicken on top.
4.) Cook on low 7-8 hours.
5.) Take chicken out and shred it.
6.) Put it back in the crock pot, along with the cheese.
7.) Let it cook for another 10-20 minutes on high, or until cheese is melted.
8.) Serve over rice or in a tortilla.

Side note:
My husband and I ate the chicken and rice in a tortilla. I have to say that this is up there as one of my favorite crock pot recipes!

slow cooker lasagna

Ingredients:
*1 lb.ground beef
*1 jar (26 oz) spaghetti sauce
*1 cup water
*1 15oz container ricotta cheese
*2 cups mozzarella cheese, divided
*1/4 cup grated parmesan, divided
*1 egg
*1 onion, chopped
*2 tbsp italian seasoning or oregano
*6 lasagna noodles uncooked

Directions:
1.) Brown meat and onion in skillet, drain.
2.) Stir in spaghetti sauce and water.
3.) Mix ricotta, 1 1/2 cups mozzarella, 2 tbsp spices, 1/4 cup parm, egg and spice in seperate bowl
4.) Spoon 1 cup meat sauce into slow cooker, top with 3 noodles broken to fit, followed by 1/2 cheese mixture
5.) Cover with 2 cups of remaining sauce.
6.) Top with remaining noodles broken to fit, cheese mixture and meat sauce, cover with lid
7.) Cook on low 4-6 hours or until liquid is absorbed.
8.) Sprinkle with remaining cheese, let stand, covered 10 min or until cheese is melted.

Why Didn't I Think of That--Chicken

I was recently talking with a friend of mine about what we were making for dinner that night. I told her I had a bottle of BBQ sauce and some chicken breasts in the slow cooker. She was shocked and amazed that she didn't think of that herself. Being inspired by that phone conversation--here are some things that I have done in my slow cooker with a few chicken breasts and 1-2 ingredients:

*3-4 Chicken breasts; bottle of BBQ sauce--cook on low 5-6 hours
*3-4 Chicken breasts; bottle of Italian salad dressing--cook on low 5-6 hours
*3-4 Chicken breasts; jar of salsa--cook on low 5-6 hours
