New Recipes!

I found the blog "Cooking for Busy Moms" and I have found some yummy success! Here are some of the favorites!

Ryan's new favorite is a Parmesan Baked Chicken stuffed with Asparagus. I don't have that recipe in front of me right now but I need to add it.


Slowcooker Monterey Chicken

Ingredients:
*3-4 chicken breasts
*1 clove garlic, minced
*2 tsp. chili powder
*1 tsp. oregano
*1 tsp. cumin
*1 tsp. salt
*1 14 oz. can diced tomatoes, including juices
*juice from one lime
*1 Tbsp. flour
*1/2 c. chicken broth
*2 c. shredded Monterey Jack cheese

Directions:
1.) Mix chicken broth and flour in a small bowl to make a thickener. Set aside.
2.) Add to the crock pot the rest of the ingredients except the chicken and cheese.
3.) Pour the chicken broth mixture in, and then add the chicken on top.
4.) Cook on low 7-8 hours.
5.) Take chicken out and shred it.
6.) Put it back in the crock pot, along with the cheese.
7.) Let it cook for another 10-20 minutes on high, or until cheese is melted.
8.) Serve over rice or in a tortilla.

Side note:
My husband and I ate the chicken and rice in a tortilla. I have to say that this is up there as one of my favorite crock pot recipes!

slow cooker lasagna

Ingredients:
*1 lb.ground beef
*1 jar (26 oz) spaghetti sauce
*1 cup water
*1 15oz container ricotta cheese
*2 cups mozzarella cheese, divided
*1/4 cup grated parmesan, divided
*1 egg
*1 onion, chopped
*2 tbsp italian seasoning or oregano
*6 lasagna noodles uncooked

Directions:
1.) Brown meat and onion in skillet, drain.
2.) Stir in spaghetti sauce and water.
3.) Mix ricotta, 1 1/2 cups mozzarella, 2 tbsp spices, 1/4 cup parm, egg and spice in seperate bowl
4.) Spoon 1 cup meat sauce into slow cooker, top with 3 noodles broken to fit, followed by 1/2 cheese mixture
5.) Cover with 2 cups of remaining sauce.
6.) Top with remaining noodles broken to fit, cheese mixture and meat sauce, cover with lid
7.) Cook on low 4-6 hours or until liquid is absorbed.
8.) Sprinkle with remaining cheese, let stand, covered 10 min or until cheese is melted.

Why Didn't I Think of That--Chicken

I was recently talking with a friend of mine about what we were making for dinner that night. I told her I had a bottle of BBQ sauce and some chicken breasts in the slow cooker. She was shocked and amazed that she didn't think of that herself. Being inspired by that phone conversation--here are some things that I have done in my slow cooker with a few chicken breasts and 1-2 ingredients:

*3-4 Chicken breasts; bottle of BBQ sauce--cook on low 5-6 hours
*3-4 Chicken breasts; bottle of Italian salad dressing--cook on low 5-6 hours
*3-4 Chicken breasts; jar of salsa--cook on low 5-6 hours
